Snow fungus is mostly polysaccharide, and those chains hold water. Gram for gram they carry glucuronic acid, one of the same building blocks as hyaluronic acid, which is why the mushroom holds up to five hundred times its weight in water.
Most of the published work is on the chemistry, and on skin cells and animals, rather than on drinking it. We would rather tell you that than pretend a syrup is a clinical trial. What is certain is a long tradition and a real humectant.
